For those of us who live far from our home countries it is always a challenge to cook typical dishes using local ingredients. The corn pie is typical from Peru and it is made with Peruvian corn which has white and big kernels. Since I live in Portugal and here it is impossible to find this kind of corn, I have adapted the recipe of corn pie using yellow, sweet corn. I share the recipe with you below:
Pastel de choclo con maíz dulce
Ingredientes:- 2 latas grandes de maíz amarillo o dulce, escurridas
- 4 huevos
- 2 cdas de azúcar blanca
- 50 gr de margarina, derretida
- 1 cda de maizena
- 3 cdtas polvo de hornear
- queso fresco (opcional)
- 3 cdas azúcar blanca para espolvorear (opcional)
- Separar las claras de las yemas. Batir las claras a punto de nieve y añadir las yemas, la maizena y el polvo de hornear.
- En otro recipiente, poner el maíz y la margarina derretida y hacer un puré usando la batidora de mano (o licuadora). Añadir una pizca de sal y las 2 cucharadas de azúcar.
- Mezclar 1. y 2. Ir añadiendo las claras de a pocos a la mezcla de los choclos cuidando de no mover mucho para que las claras no se bajen.
- Vaciar mitad de la mezcla en un molde de pan previamente enmantequillado. Poner el queso fresco en pedazos (opcional) y cubrir con la otra mitad de la mezcla. Espolvorear las 3 cucharadas de azúcar por encima si quieren el pastel más dulce.
- Llevar a horno pre-calentado a 175ºC y hornear por 45 minutos.
A mí me gusta servir el pastel con salchichas o chorizos a la parrilla y ensalada.
Peruvian corn pie with sweet corn
Ingredients:
- 2 large cans of corn, drained
- 4 eggs
- 2 tbsp. white sugar
- 50 gr margarine, melted
- 1 tbsp. corn starch
- 3 tsp. baking powder
- cheese (optional)
- 3 tbsp. white sugar to sprinkle (optional)
- Separate the egg whites from the yolks. Whip the whites until stiff. Add the starch and the baking powder.
- In another bowl, mix the corn with the melted margarine and make a puree with the hand mixer (or blender). Add a bit of salt and the 2 tbsp. of sugar.
- Mix 1. and 2. Add the whites little by little to the corn, mixing gentle.
- Pour half the mix into a buttered bread pan. Add the pieces of cheese (optional). Pour in the remaining mix. Sprinkle with the 3 tbsp. additional sugar.
- Bake in a pre-heated oven at 175ºC for 45 minutes.
I like to serve it with grilled sausages and salad.
