2 formas de comer coliflor | 2-way cauliflower

Les gusta la coliflor? Tienen alguna receta favorita para preparla? Aquí les dejo un par de ideas ricas y fáciles. Lo único que tienen que hacer primero es sancochar (cocer) la coliflor.

Do you like cauliflower? Do you have any favorite recipe to prepare it? I leave you here a couple of ideas, tasty and easy. The only thing you need to do first is to cook the cauliflower.

1. Coliflor con salsa blanca

Hagan una salsa blanca de consistencia mediana con dos cucharadas de margarina y 2 cucharadas de harina por cada taza de leche (ver instrucciones en este post). Y listo! Cubran la coliflor ya cocida con la salsa. Es deliciosa como entrada o con arroz.

1. Cauliflower and white sauce

Prepare a medium-consistency white sauce using two tbsp. of margarine plus 2 tbsp. of flour per cup of milk (see the instructions on this post). And it's done! Pour the white sauce on top of the cauliflower (already cooked). It's delicious as an entree or with rice.


2. Coliflor rebozada

Batan dos huevos en un bowl, adicionen sal y pimienta. Pongan a calentar un poco de aceite en una sartén. Pasen los pedazos de coliflor (ya cocida) por el huevo y pónganla a freir. Sirvan con arroz blanco y ensalada.

2. Battered cauliflower

Lightly beat two eggs in a bowl, add salt and pepper. Heat some vegetable oil in a pan. Dip the pieces of cauliflower (already cooked) in the batter and fry. Serve with white rice and salad.

Sopa Portuguesa II | Portuguese Soup II

Ahora que está frío, me gusta tener una sopita para calentarme. Así que decidí compartir con ustedes otra versión de sopa Portuguesa y de paso les enseño una de las variedades de col que hay en este país. Creo que es el sitio en donde más variedades de col he encontrado y la que usé para la sopa de hoy es súper común aquí y crece como si fuera una palmerita.

Now that the days are colder, I like to have a hot soup to warm me up. So I decided to share with you another version of the portuguese soup and show you one of the cabbage varieties they have around here. I think this is the place where I have seen more kinds of cabbage and the one I used today is very common and it grows like a small palm tree.

Sopa Portuguesa II

Ingredientes:
  • 2 papas grandes peladas y cortadas en rodajas
  • 1 zanahoria grande, pelada y cortada en rodajas
  • 1 pedazo de zapallo, pelado y cortado en cubos
  • 4-6 tazas de agua
  • col cortada en pedazos
  • fideos "pepita" (o cuscús de grano grande), cocidos
  • sal y aceite de oliva a gusto
Poner el agua en una olla junto con las papas, calabaza, y zanahorias. Pueden poner las coles a hervir en una canastilla de metal y las van cociendo junto con las demás verduras (sin mezclarlas). (Estas canastillas son lo máximo y súper prácticas! Les dejo una foto por si no saben de lo que hablo). Llevar a hervir. Cuando el agua esté hirviendo le echan la sal. Cuando las verduras estén cocidas, las "procesan" con una batidora de mano o un aplastador de papas de metal (ver foto aquí). Una vez hecha la crema, le agregan las coles, los fideitos (ya cocidos) y el aceite, y dejan que hierva otra vez. Y ya esta lista!

Portuguese Soup II


Ingredients:
  • 2 large potatoes, peeled and cut in slices
  • 1 large carrot, peeled and sliced
  • 1 piece of gourd or pumpkin, peeled and cut in pieces
  • 4-6 cups of water
  • cabbage cut in pieces
  • pasta or large grain cous cous, cooked
  • salt and olive oil
Put the water in a pot together with the potatoes, gourd, and carrot. You can cook the cabbage together with the other veggies using a steaming basket (without mixing them). (These baskets are very useful and very practical! I show you a photo below in case you don't know them). Bring to a boil. Once the water is boiling, add the salt. When the vegetables are cooked, blend them using a hand blender or a potato smasher (see photo here). Once processed, add the cabbages, the pasta, the olive oil and let the soup boil again. And it's ready!

Locro y cocina Peruana básica | Locro and Peruvian cuisine 101

El otro día, mi suegra me dio una calabaza entera. Así que decidí hacer locro. El locro es un plato Peruano a base de zapallo (calabaza), y lleva papas, arverjitas, maíz, leche y queso. Demora un poquito en hacerse porque tenemos que esperar a que el zapallo se cocine pero es un plato muy sabroso, y vegetariano!

The other day my mother in law gave me a whole gourd so I decided to make "locro". Locro is a Peruvian dish based on gourd (squash), and also has potatoes, peas, corn, milk and cheese. It takes a little to prepare because we have to wait for the squash to cook but it is delicious and vegetarian!

Mucha gente aquí me pregunta cómo es la cocina peruana. Yo siempre digo que una de sus características es que tiene muchos condimentos. Mientras los condimentos básicos portugueses son el aceite de oliva, ajos, y sal, los peruanos usamos el "guiso básico", una mezcla de aceite, cebolla, cubito, ajos, oréganos, sal y pimienta. Muchas comidas típicas peruanas tiene como base este guiso incluyendo el locro.

Many people here ask me how Peruvian cuisine is. I always say that one of its characteristics is that it has a lot of spices. While basic Portuguese condiments are olive oil, garlic and salt, Peruvians use the "basic stew", a mixture of vegetable oil, onions, flavor bouillon, garlic, oregano, salt and pepper. Many typical Peruvian dishes start with this basic stew, including locro. 


Locro de zapallo (con ingredientes portugueses)


Ingredientes:
  • Guiso básico (ver abajo)
  • Medio zapallo o 750 gr, pelado y picado
  • media lata de maíz
  • media taza de arverjas congeladas
  • papas, peladas y cortadas en pedazos (opcional)
  • leche
  • queso freso o fundido, cortado en cubos
Hacer un guiso básico en una olla. Agregar los zapallos, las arverjitas y las papas y dejar cocinar a fuego lento hasta que el zapallo se cocine. Con la ayuda de un aplastador de papa, deshacer un poco los zapallos hasta formar una especie de puré. Añadir el maíz, la leche y el queso. Dejar hervir una vez más y apagar. Servir con arroz blanco y un poquito de perejil. Yo hice el locro sin papa y lo comí con unas tortillitas de plátano. Estaba buenísimo!


Peruvian locro (with portuguese ingredients)


Ingredients:
  • Basic stew (see below)
  • Half a squash or 750 gr, peeled and cut
  • 1/2 can of corn
  • 1/2 cup of frozen peas
  • potatoes, peeled and cut in cubes (optional)
  • milk
  • processed cheesed or other hard cheese in cubes
Prepare the basic stew in a pot. Add the squash, peas and potatoes and cook in medium heat. With the help of a potato smasher, smash the squash a little until forming a puree. Add the corn, milk and cheese. Let boil once more and turn off the heat. Serve with white rice and some parsley. I did the locro without the potatoes and served them with banana tortillas. It was yummy!

Guiso Básico

Cortar una cebolla en cubitos finos. Poner en una olla un chorrito de aceite vegetal, una cucharadita de ajos molidos, oréganos secos, un cubito maggi o knorr, y las cebollas. Dejar cocinar a fuego medio hasta que las cebollas se cocinen.

Basic stew

Chop one onion. Put some vegetable oil in a pot, one tsp of minced garlic, dried oregano, one flavor bouillon, and the onion. Let it cook at medium heat until the onions are cooked.

Lasagna fácil | Easy lasagna

Hoy voy a compartir con ustedes mi receta de lasagna. Hay varios tipos de lasagna y muchas formas de hacerla. Mi versión está basada en la que mi mamá hacía en casa, con la grande diferencia que ella hacia el tuco (salsa roja) y yo compro la salsa hecha.

Today I'll share with you my lasagna recipe. There are many types of lasagna and many ways of preparing it. My version is based on the one my mom used to make at home, with the big difference that she made the red sauce and I buy it.

Para hacer la lasagna más rápida, compren la pasta que no necesita pre-cocción. El secreto está en hacer la salsa blanca bastante aguada. Les pongo la receta de salsa blanca (o bechamel) que yo hice al final de este post.

To prepare the lasagna in less time, buy the pasta that doesn't need pre-cooking. The secret is to make a very light white sauce. I'm including the white sauce recipe I used at the bottom.




Lasagna fácil

Ingredientes:

  • una caja de fideos para lasagna, que no necesite pre-cocción
  • 3 tazas de salsa blanca ligera (ver receta abajo)
  • 1 o 2 frascos de salsa bolognesa (salsa roja con carne)
  • 1 paquete de queso edam o flamengo en láminas
  • 1/2 o 1 paquete de queso mozzarella rallado
Pongan un poco de salsa blanca en un pyrex cuadrado. Pongan los fideos para lasagna formando una capa. Agreguen un poco de la salsa roja, otra capa de fideos, una capa de salsa blanca y láminas de queso por encima, más fideos y así hasta que terminan con la salsa blanca. Pongan queso mozzarella por encima y metan al horno pre-aquecido a 175ºC por 45-50 minutos hasta que dore. Para saber si los fideos ya se cocinaron, inserten un palito mondadientes. Buen provecho!


Easy lasagna

Ingredients:
  • one box of lasagna pasta, that doesn't need pre-cooking
  • 3 cups of light white sauce (recipe at the bottom)
  • 1 or 2 jars of red sauce (bolognese or red sauce with ground beef)
  • 1 package of sliced cheese, edam or flamengo
  • 1/2 or 1 package or shredded mozzarella cheese
Put some white sauce at the bottom of a square pyrex dish. Put a layer of pasta. Add some red sauce, another layer of pasta, a layer of white sauce with the sliced cheese, more pasta and so on until you finish with the white sauce. Sprinkle the mozzarella cheese on top and bake on a pre-heated oven at 175ºC (350ºF) for 45-50 minutes or until golden brown. Insert a toothpick in the middle of the lasagna to know if the pasta is cooked. Enjoy!



Salsa blanca ligera

  1. Calienten 3 tazas de leche en el microondas (a máxima potencia por 6 minutos).
  2. Mientras, coloquen 60 gramos de margarina en una cacerola y pónganla al fuego hasta que derrita. Añadan los condimentos que quieran: sal, pimienta, ajo en polvo, nuez moscada. Adicionen 5 cucharadas de harina y muevan bien hasta formar una crema espesa (vean la foto abajo).
  3. Agreguen la leche de a pocos y vayan moviendo hasta que espese ligeramente. 

Light white sauce

  1. Heat 3 cups of milk in the microwave (on high for 6 minutes).
  2. Meanwhile, put about 60 gr (5 tbsp) of margarine in a small pot and heat until melted. Add some salt, pepper, powdered garlic, and nutmeg. Add 5 tbsp of flour and mix until a firm cream is formed (see photo below).
  3. Add the milk little by little and mix until the sauce thickens a bit.

Tortillas de plátano | Banana tortillas

No saben qué hacer con los plátanos maduros? Aquí les dejo una idea: tortillas de plátanos. En mi casa las hacían con alguna frecuencia y a mi me encantan. Las como solas o acompañando algún plato. Esta vez las hice para comer con locro de zapallo (pongo esa receta luego).

Don't know what to do with those ripe bananas? I give you an idea: banana tortillas. They used to make them at home frequently when I was growing up and I love them. I eat them alone or with any dish. This time I had them together with a squash "locro" (I'll post that recipe later).


Tortillas de plátano

Ingredientes:
(para 6 o 7 tortillas)
  • 3 plátanos maduros
  • 1 huevo
  • 1 cda de harina
Calentar un poco de aceite en una sartén. Poner los plátanos en un bowl y machucarlos con la ayuda de un tenedor, adicionar el huevo y la harina y mezclar bien. Ir colocando la mezcla en la sartén con una cuchara y freir por ambos lados con la ayuda de una espátula. Servir en un plato espolvoreados con azúcar.

Banana tortillas

Ingredients:
(yield 6 or 7 tortillas)

  • 3 ripe bananas
  • 1 egg
  • 1 tbsp flour
Heat some vegetable oil in a pan. Put the bananas in a bowl and smash them using a fork, add the egg and the flour and mix everything well. Put spoons of this mix in the pan and fry until both sides are brown. Serve in a plate sprinkling with sugar.

Cómo ahorrar cuando vamos al mercado | How to save money when we go to the market

Como sigo enferma, pensé en compartir con ustedes algunas ideas que les pueden ayudar a comprar menos (y ahorrar dinero!) cuando van al supermercado. Si ustedes se acuerdan de otras, las pueden dejar en los comentarios y así todos aprendemos.

Since I'm still sick, I thought about sharing some ideas with you that might help you buy less (and save money!) when you go grocery shopping. If you remember other tips, leave them in the comments below.



Antes de ir de compras:
  1. Hagan su lista de menús para esa semana o esos 15 días. De esta forma saben qué ingredientes necesitan para cada comida que van a preparar.
  2. Tengan siempre a la mano en su cocina una pizarrita blanca o un block de notas donde puedan ir escribiendo las cosas que se van acabando o que necesitan comprar la próxima vez que vayan al mercado: sal, guantes de cocina, mantequilla, jabones, etc.
  3. Revisen las promociones de la semana (por internet, por las publicidades que reciben en casa, etc) y vean si pueden usar algún cupón o descuento.
Before going shopping:
  1. Make a menu list. This way you know what ingredients you need to buy for each dish you want to prepare.
  2. Have a white board or a notebook at hand in your kitchen where you can keep track of the things that you need to buy next time: salt, gloves, butter, soap, etc.
  3. Check that week's savings at your grocery store (by visiting their website or checking the fliers) and see if you can use any coupon or discount.

Cuando van a las compras:
  1. Siempre lleven una lista.
  2. Nunca vayan a las compras cuando tienen hambre. Terminan comprando más cosas porque todo les provoca.
  3. Sigan su lista! Esto es muy importante. A veces sabemos que no necesitamos llevar algo pero terminamos comprando varias cosas que "nos provocan". Pueden seguir una regla muy simple, sólo podemos comprar un "antojo" de cada vez. Así, una semana compramos el chocolate, la otra las galletas, etc. 
  4. Siempre busquen marcas genéricas, son más baratas y muchas son de igual calidad que las marcas conocidas.
  5. Fíjense bien en el precio de las cosas empaquetadas. Sobretodo en los supermercados, (por lo menos aquí pasa frecuentemente) las frutas y verduras empaquetadas cuestan más que las sueltas. Muchas veces sale más barato agarrar una bolsa y escoger las verduras/frutas que llevar el paquete. (He visto en algunos supermercados aquí que el precio por kilo de los empaquetados son el DOBLE que el de los no empaquetados).

When you go shopping:
  1. Always take a list of the things you need.
  2. Never go to the supermarket when you're hungry, you end up buying more things you don't need.
  3. Follow your list! This is very important. Sometimes we know we don't need to buy something but we get it anyway because we have "cravings". You can follow a very easy rule, you can only take one thing you crave on each supermarket visit. This way, one week we get the chocolate, the next we get the cookies, etc.
  4. Look for generic brands, they're cheaper and many times they have the same quality than the well-known brands.
  5. Look at the packaged goods closely. Especially in supermarkets (at least I have seen it happen frequently here), packed veggies or fruits are much more expensive than the non-packaged ones. It is cheaper to get a bag and pick the fruits/veggies yourself than get a package. (I've seen in some supermarkets here that sometimes the price per kilogram of the packaged good is TWICE the non-packaged).

Cuscús (casi) vegetariano | (Almost) Vegetarian cous cous

Ya probaron hacer cuscús en casa? A mí me gusta mucho. Es un plato bastante práctico, se cocina en poco tiempo y es muy versátil. Anoche los hice para la cena, pero como aún no salgo de casa por el resfrío, me trajeron el cuscús errado del mercado así que demoré más tiempo del previsto en hacerlo. Les explico.

Have you tried cooking cous cous? I like it a lot. It is a very practical dish, it needs little time to be prepared, and is very versatile. I made them last night for dinner, but since I'm still not going out because of the cold, they brought me the wrong cous cous from the market so it took me more time to cook it than planned. I'll explain you.

Hay dos tipos de cuscús, el de grano grande, que es el que no me gusta porque demora 15 minutos en cocinarse, y el de grano fino que se cocina en 5 minutos. Les pongo una foto de referencia. Si quieren probar esta receta, yo les sugiero comprar el cuscús de grano fino.

There are two types of cous cous, large grain and small grain. I don't like the large grain because it takes about 15 minutes to cook versus the small grain that takes about 5. I include a reference photo below. If you want to try and make this recipe, I suggest you use small grain cous cous.


Cuscús vegetariano


Instrucciones:
  1. Pongan en una sartén: un chorrito de aceite de oliva, un cubito knorr o maggi, ajo fresco picado (o en polvo), champiñones frescos picados (o de lata), tomates y pimientos en cubo. (Yo puse además las sobras de pollo del almuerzo). Dejen cocinar.
  2. Añadan a la sartén una taza de agua y dejen hervir. Cuando el agua esté hirviendo, apagan el fuego y agregan una taza de cuscús. Tapan y dejan reposar por 5 minutos. Muevan el cuscús con un tenedor.
  3. A comer!
La proporción para este cuscús (de grano fino) es una taza de agua por una de cuscús.
Si usan el cuscús grueso, tienen que cocinarlo como si fueran fideos normales (en una olla con abundante agua) por el tiempo que indique el paquete, típicamente algo de 15 minutos. Una vez hechos, los agregan a la sartén (que fue lo que yo hice ayer).

Vegetarian Cous cous


Instructions:
  1. Put in a saucepan: Olive oil, one flavor bouillon or cube, fresh garlic (chopped) or powder garlic, fresh mushrooms (diced) or canned, and chopped fresh tomatoes and peppers. (I also added some leftover chicken from lunch). Let everything cook.
  2. Add one cup of water to the saucepan and let it boil. Once the water is boiling, turn off the heat and add one cup of small grain cous cous. Cover with lid and let stand for 5 minutes. Stir the cous cous with a fork.
  3. Enjoy!
The proportion of water for the small grain cous cous is one cup of water per cup of cous cous.
If you're using the big gran cous cous, you have to cook it as you would cook regular pasta, in a pot with abundant water. It will take around 15 minutes. Once cooked, drain and add to saucepan mix (that's what I did yesterday).
