Now that the days are colder, I like to have a hot soup to warm me up. So I decided to share with you another version of the portuguese soup and show you one of the cabbage varieties they have around here. I think this is the place where I have seen more kinds of cabbage and the one I used today is very common and it grows like a small palm tree.

Sopa Portuguesa II
Ingredientes:- 2 papas grandes peladas y cortadas en rodajas
- 1 zanahoria grande, pelada y cortada en rodajas
- 1 pedazo de zapallo, pelado y cortado en cubos
- 4-6 tazas de agua
- col cortada en pedazos
- fideos "pepita" (o cuscús de grano grande), cocidos
- sal y aceite de oliva a gusto
Portuguese Soup II
Ingredients:
- 2 large potatoes, peeled and cut in slices
- 1 large carrot, peeled and sliced
- 1 piece of gourd or pumpkin, peeled and cut in pieces
- 4-6 cups of water
- cabbage cut in pieces
- pasta or large grain cous cous, cooked
- salt and olive oil
Put the water in a pot together with the potatoes, gourd, and carrot. You can cook the cabbage together with the other veggies using a steaming basket (without mixing them). (These baskets are very useful and very practical! I show you a photo below in case you don't know them). Bring to a boil. Once the water is boiling, add the salt. When the vegetables are cooked, blend them using a hand blender or a potato smasher (see photo here). Once processed, add the cabbages, the pasta, the olive oil and let the soup boil again. And it's ready!
